Cauliflower Omelette

Ingredients
- 500 g cauliflower
- 4 pcs eggs
- 80 ml milk
- 20 g parmesan
- 2 pinches herbs de Provence
- 2 tbsp cooking oil
- salt, to taste
- ground black pepper, to taste
Directions
Step 1
Remove the outer leaves of the cauliflower. Separate into florets, rinse with water, and boil for 5 minutes. Drain the water and let the cabbage cool.
Step 2
Beat the eggs (4 small or 3 large) and add salt, black pepper, and a pinch of Herbs de Provence. Add milk and mix well.
Step 3
Heat a frying pan, add cooking oil, and add cauliflower in the pan.
Step 4
Pour the egg mixture over the cauliflower, sprinkle with Herbs de Provence, cover with a lid, and cook for 7 minutes. The center should remain slightly runny.
Step 5
Sprinkle with grated Parmesan, cover with a lid, and let it cook for another 3 minutes. Serve hot.
