Ingredients
- 60 g cornmeal, dry
- 50 g cucumber
- 50 g cherry tomatoes
- 20 g herbs (dill, parsley, cilantro)
- 30 g feta cheese
- 5 g (1 tsp) unsalted butter (82.5% fat)
- Salt and pepper, to taste
Directions
Step 1
Cook the cornmeal until done. To prevent bitterness and achieve a fluffy texture, toast the cornmeal in a dry skillet for a few minutes before cooking. Once cooked, add butter and season with salt and pepper.
Step 2
Finely chop the herbs and add them to the porridge.
Step 3
Sprinkle feta cheese on top.
Step 4
Serve with cucumbers and cherry tomatoes on the side.
Tips
You can freeze feta cheese and grate it into dishes as needed. This way, the cheese can be stored longer, and less will be needed for cooking and flavoring purposes.
