Braised Cabbage with Mushrooms

Ingredients
- 1/2 head of cabbage
- 1 carrot, grated
- 1 onion, diced
- 200g mushrooms, sliced
- 1/2 cup tomato juice
- 1 bay leaf
- salt and pepper
- paprika
- 1 tbsp olive oil
Directions
Step 1
In a deep skillet or pot, sauté the diced onion.
Step 2
Grate the carrot and add it to the onions. Cook on low heat.
Step 3
Once the carrots and onions are soft, add the shredded cabbage, a pinch of salt, and cover with a lid. Add a bit of paprika, ground pepper, and the bay leaf. Stir well.
Step 4
When the cabbage releases its juice, pour in the tomato juice, mix well, and let it simmer on low heat for 10-15 minutes to evaporate the moisture.
Step 5
In a separate skillet, heat a small amount of oil and sauté the sliced mushrooms until they release their moisture and turn golden brown.
Step 6
Add the cooked mushrooms to the cabbage mixture and mix well. Add a finely diced garlic clove.
