Ingredients
- 1 eggplant, cubed
- 1 zucchini, cubed
- 1 tomato, cubed
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 tbsp olive oil
- 2 tbsp green peas (optional, fresh or canned)
- Salt, to taste
- Spices, to taste
Directions
Step 1
Place diced eggplant, zucchini, and tomato in a pot with a little water and cook on medium heat.
Step 2
Finely chop the onion and carrot and sauté them in a pan with olive oil.
Step 3
Add the onion and carrot mixture to the rest of the vegetables in the pot. Optional: Add green peas.
Step 4
Season with salt and spices to taste. Simmer on low heat for 20-30 minutes.
