Ingredients
- ¼ sweet red pepper
- ¼ sweet green pepper (or use same color pepper)
- ¼ onion
- ½ celery stalk
- ½ tomato
- ½ cup pure tomato juice
- ½ cucumber
- fresh mint and basil, to taste
- salt, to taste
- 1 tbsp. olive oil
- 1 tsp. lemon juice
- 1 tsp. dijon mustard
Directions
Step 1
Place all diced vegetables, mint, basil, oil, and tomato juice in a blender and blend until smooth.
Step 2
Season with salt to taste, add a little water if necessary.
Step 3
Serve chilled.

Serve Tip
If desired, heat the gazpacho until it starts to simmer and then turn off the heat.
