Ingredients

  • ¼ sweet red pepper
  • ¼ sweet green pepper (or use same color pepper)
  • ¼ onion
  • ½ celery stalk
  • ½ tomato
  • ½ cup pure tomato juice
  • ½ cucumber
  • fresh mint and basil, to taste
  • salt, to taste
  • 1 tbsp. olive oil
  • 1 tsp. lemon juice
  • 1 tsp. dijon mustard

Directions

Step 1

Place all diced vegetables, mint, basil, oil, and tomato juice in a blender and blend until smooth.

Step 2

Season with salt to taste, add a little water if necessary.

Step 3

Serve chilled.

Serve Tip

If desired, heat the gazpacho until it starts to simmer and then turn off the heat.
