Baked Potatoes with Feta Cheese and Herbs

Ingredients
- 100 g potatoes (1 medium-sized)
- 50 g feta cheese
- 1 tsp olive oil
- 1 tsp paprika
- 20 g green onions
- 10 g dill/parsley
Directions
Step 1
Cut the potatoes in half, pierce with toothpicks, and place in a preheated oven at 200°C for 25 minutes.
Step 2
Mix the feta cheese with green onions and herbs.
Step 3
When the potatoes are soft (easily pierced with a fork), remove them from the oven and scoop out the flesh from each half.
Step 4
Mix the scooped out flesh with the cheese mixture and stuff the potato boats.
Step 5
Sprinkle with paprika and drizzle 1 tsp olive oil on top. Place back in the oven for another 5 minutes.
